Kelly’s Slow Cooker Potato Soup

Kelly tweaked this from a Paula Dean recipe.  Everyone at work loves this soup. We throw everything together at the beginning of our shift and then munch on it all day.

  • 1 bag frozen hash browns – Southern Style (they look like little squares)
  • 1 package of Chappel Hill sausage, diced (optional)
  • 1 cup of chopped bacon (she cheats and uses a packet of real bacon pieces)
  • 28 oz chicken broth
  • 1 can cream of chicken soup
  • 1/2 cup chopped onion (I cheat and use frozen chopped onion)
  • 1/3 tsp black pepper
  • 8oz of cream cheese

Top with shredded cheddar cheese (optional) and serve.

 

Combine all ingredients in crock pot and cook on low for 5 hours.  Stir in 8 oz of block of cream cheese and continue to cook for 30 minutes.
